Healthy Recipes From Twin Sisters Who Care - Lasagna Soup

When most of us think of our favorite family recipes or holiday classics, we do not necessarily think of healthy food. Casseroles, biscuits, cheesy and buttery and fried bites tend to dominate discussions of "comfort food." Well, twin sisters Joy and Judy from our original series Twin Sisters, Love & Cooking! are trying to develop a different, healthier style of comfort food, and this scrumptious Lasagna Soup recipe is a perfect example!
Joy and Judy were inspired to re-work their Italian family's favorite recipes into healthier versions after Judy was diagnosed with breast cancer in 2009. Fortunately, today, Judy is a survivor, and the twin sisters get to spend tons of quality time together—especially in the kitchen.
In addition to developing and sharing healthy comfort food recipes (you can get the Lasagna Soup recipe below!), Joy and Judy do some amazing work with organizations dedicated to helping women, like the Mercy Learning Center, which provides free literacy training for low-income women and their children.
Everybody has a classic holiday recipe that they love to make with their families. For Joy and Judy, that favorite childhood recipe is Lasagna Soup. Through smart substitutions, like turkey sausage instead of pork and rice noodles instead of wheat, the sisters were able to replicate the flavor and feeling of this comfort food in a dish that has far fewer calories.

Lasagna Soup Recipe:
2-3 turns of olive oil
1 pound of turkey sausage,
optional1 onion, diced2 cloves of garlic,
chopped 2 lbs fresh tomatoes,I used campari tomatoes
2 tablespoons tomato paste
4 cups bone broth or chicken broth
Salt and pepper to taste
1/4 cups grated parmesan cheese
1/2 cup red wine
1/2 pound lasagna noodles *broken into large pieces* Gluten free pasta, rice pasta or whole wheat pasta can be used, any shaped pasta is fine
skim milk ricotta, garnish
Heat oil in a large soup pot. Add the sausage and cook until browned. Add onions and garlic and cook for another 3-4 minutes. Add tomatoes, chicken broth, and tomato paste along with the wine and parmesan cheese. Let simmer for an hour, taste and re-season.
About 10 minutes before you are ready to serve, add the pasta to the soup pot. However, it may take a bit longer to cook so keep checking. If you need more broth to compensate for pasta soaking up the soup, go ahead and add more. If you prefer it, you can cook some additional pasta.
Ladle the soup into big bowls and top with a dollop of low fat ricotta cheese! FYI- this soup goes perfect with crusty bread!
